Corkscrew

The CORKSCREW is a martini-style light rum cocktail that suits almost any occasion or time of the year. It’s pleasing with its mild peach flavor, but is beautifully offset and balanced by dry vermouth. It’s similar to a Jean Harlow but uses the peach schnapps to sweeten it instead of sweet vermouth.

Requirements: light rum, dry vermouth, peach schnapps, lime slice for garnish

• 1.5 oz. light rum
• 1/2 oz. dry vermouth
• 1/2 oz. peach schnapps
• 1 lime slice for garnish

Add all ingredients to an ice-filled shaker. Shake vigorously and strain into a chilled cocktail glass. Drop a thin slice of lime into the drink for garnish.

Comments: As in most straight up preparations, a good dry vermouth and Bacardi-or-better light rum can make a difference. This can also be served on the rocks in a highball glass where club soda is used as topper.
