Amaretto Sour

The AMARETTO SOUR is as simple as Amaretto liqueur and lemon juice. But the best recipe is the one originated by Portland bartender Jeffrey Morgenthaler, which props up Amaretto with strong bourbon and adds frothy light texture with egg white. The egg white is optional, but the rest is by far the more sophisticated and superior mix of this cocktail from the 1970’s, and is preferred by most.

Requirements: Amaretto ((Disaronno preferred), bourbon (50-75% ABV), lemon juice, simple syrup, egg white, orange wheel, maraschino cherry

  • 1.5 oz. Amaretto (Disaronno preferred)
  • 3/4 oz. strong bourbon
  • 1 oz. fresh lemon juice
  • 1 tsp. simple syrup
  • 1/2 oz. egg white
  • 1 orange wheel and maraschino cherry for garnish

Dry shake (without ice) ingredients in a shaker for 15 seconds if using egg white. Add ice and shake to chill. Strain into an old-fashioned rocks glass filled with ice. Garnish with an orange wheel and maraschino cherry.

Comments: Jeffrey Morgenthaler was on target when he thought Amaretto — a fruity liqueur made from almonds and apricot pits — was too weak to stand on its own as a sour. The bourbon and egg white elevate this sour to a higher, more balanced and tastey level. Though I didn’t have Disaronno Amaretto handy, I found this completely enjoyable with Luxardo Amaretto.
