Morning Glory Fizz

The MORNING GLORY FIZZ is a Scotch-based drink originally conceived as a a hangover recovery cocktail. With the froth of an egg white and fizz of soda water, it’s meant to be consumed quickly and not sit. Most recipes include pre-rinsing a glass with absinthe or at least adding a couple of dashes. As with other fizz drinks like the Paloma or French Harvest, this one can be enjoyed any time of the day but is great for brunch.

Requirements: Scotch whisky (single malt), absinthe, lemon juice, lime juice, simple syrup, egg white, soda water, orange peel for garnish

  • 2 oz. Scotch whisky
  • 1/2 oz. lemon juice
  • 1/2 oz. lime juice
  • 1/2 oz. simple syrup
  • 1 tsp. (2-3 dashes) absinthe
  • Soda water/seltzer (to top off glass)

Add ingredients to an empty shaker and dry shake 30 seconds. Absinthe may be added directly or used simply to rinse the glass beforehand. Add 1 large ice cube (or 4 smaller cubes) to shaker and shake vigorously 30 seconds. Strain into a highball glass. Top with soda water until foam header reaches top of glass. Garnish with an orange peel.

History: The earliest references to this was in 1882 by author Harry Johnson and later O.H. Byron’s Modern Bartender’s Guide published in 1884. It was recommended as a morning pick-me-up and appetite builder. For it’s association as a morning starter, it was also associated with hangover remedies. It is a Silver Fizz cocktail.

Comments: This is quite simply delicious and goes down easily. And although modern drinkers are more likely to start their day with a vegetable-juice smoothie or a cafe latte, the egg-white foam and citrus overtones make it a nice brunch item. (The picture above lost about an inch of foam during the photography process; so expect more foam and drink it quickly.)
