Maple Old Fashioned
A MAPLE OLD FASHIONED calls for a dark or aged rum to be sweetened, not with simple syrup or sugar cube, but with maple syrup. The standard Old-Fashioned template of bitters and orange peel are then added to create a wonderful diversion from the standard whiskey Old-Fashioned. The maple flavoring gives it particular appeal as a seasonal fall cocktail, one that won’t get watered down by ice.
Requirements: dark or golden aged rum, maple syrup, Angostura bitters (or maple bitters), orange twist for garnish
- 2 oz. dark or aged rum
- 1/2 oz. maple syrup
- 2 dashes Angostura bitters
- 1 orange twist for garnish
Add liquid ingredients to an ice-filled mixing glass and stir to chill. Strain into a chilled cocktail glass. Garnish with an orange twist.
Comments: It’s best to test smaller amounts of maple syrup to the drink and then add more if needed. Otherwise, if you’ve over-sweetened the drink, it’s harder to balance with more rum. The rum aficionado can experiment with a variety of rums from Jamaica, Barbados, Bermuda, etc., as long as they’ve been aged in barrels to soften them.
History: This variation of the Old-Fashioned was reportedly created by Allen Katz, co-founder of New York Distilling Company.
