Pegu Club

The PEGU CLUB elevates the classic gin and lime combo with orange curaçao, orange bitters and Angostura bitters. The resulting mix is a full-flavored drink. While the Pegu Club may not be as famous as the Sazerac or martini, it is a delightful choice for those who appreciate a good gin cocktail.
Requirements: dry gin, orange curaçao (preferred) or Cointreau, lime juice, Angostura and orange bitters, simple syrup (optional), and an orange-peel garnish.
- 2 oz. dry gin
- 3/4 oz. orange curaçao (or Cointreau)
- 3/4 oz. lime juice
- 1 dash Angostura bitters
- 1 dash orange bitters
- 1 dash simple syrup (1/2 tsp)
- 1 orange peel for garnish
Add the liquid ingredients to an ice-filled shaker. Shake vigorously and strain into a cocktail or coupe glass. Garnish with an orange peel.
Comments: When using dry orange curaçao instead of the less common Cointreau, I found the Pegu Club too dry. To create a fuller flavor with a hint of sweetness, I added 1/4 oz. more curaçao and a dash of simple syrup. Feel free to adjust to your taste or stick to the original recipe if you prefer a drier cocktail.
History: Dating back to the early 1900s, this drink became the choice of imperialist British officials in Southeast Asia and was later published by Harry’s NY Bar owner Harry MacElhone in Barflies and Cocktails, 1927.
