Pegu Club
The PEGU CLUB embellishes the common gin & lime combo with orange curacao, orange bitters and Angostura bitters. The resulting mix is a full-flavored drink. The Pegu Club is considered a classic “Sour”, and though not as famous as the Sazerac or martini, it’s a nice treat for those who enjoy a good gin cocktail.
Requirements: dry gin, orange curacao (preferred) or Cointreau, lime juice, Angostura & orange bitters, simple syrup (optional), orange-peel garnish
- 2 oz. dry gin
- 3/4 oz. orange curacao (or Cointreau)
- 3/4 oz. lime juice
- 1 dash Angostura bitters
- 1 dash orange bitters
- 1 dash simple syrup (1/2 tsp)
- 1 orange peel for garnish
Add liquid ingredients to an ice-filled shaker. Shake vigorously and strain into a cocktail or coupe glass. Garnish with an orange peel.
Comments: When using the dry orange curacao (rather than the less used Cointreau), I thought the Pegu Club too dry. So I added both 1/4 oz. more curacao and a dash of simple syrup to give it fuller flavor with a touch of sweetness. You can adjust to your own liking as I did or the standard as above if you prefer a dry cocktail.
History: Dating back to the early 1900’s, it became the drink of choice for imperialist British officials in Southeast Asia and was later published by Harry’s NY Bar owner Harry MacElhone in Barflies and Cocktails, 1927.
