Maple Old Fashioned

A MAPLE OLD FASHIONED calls for dark or aged rum to be sweetened with maple syrup instead of simple syrup or a sugar cube. The traditional Old-Fashioned template of bitters and an orange peel is then added, creating a delightful variation from the classic whiskey Old-Fashioned. The maple flavor gives it particular appeal as a seasonal fall cocktail that won’t get watered down by ice.
Requirements: dark or golden aged rum, maple syrup, Angostura bitters (or maple bitters), orange twist for garnish
- 2 oz. dark or aged rum
- 1/2 oz. maple syrup
- 2 dashes Angostura bitters
- 1 orange twist for garnish
Add the liquid ingredients to an ice-filled mixing glass and stir to chill. Strain into a chilled cocktail glass and garnish with an orange twist.
Comments: Like bourbon, rum is aged in barrels, giving it similar tones of caramel and vanilla. When preparing the mix, it’s best to start with smaller amounts of maple syrup and add more if needed. Over-sweetening the drink can make it harder to balance with additional rum. Rum aficionados can experiment with a variety of rums from Jamaica, Barbados, Bermuda, etc., as long as they have been aged in barrels to soften their flavor.
