Rabo de Galo
The RABO DE GALO is reportedly the second most popular cocktail in Brazil. And for fans of it’s well-known #1 cocktail, the caipirinha, this is another delicious but different cachaca offering. It combines with Italian-made Cynar and sweet vermouth to create a classic rocks refresher. With the three ingredients available, it’s a quick stir directly into an ice-filled rocks glass.
Requirements: cachaca, Cynar, sweet vermouth, orange (or lime) twist for garnish
- 2 oz. cachaca
- 1/2 oz. Cynar
- 1/2 oz. sweet vermouth
- 1 orange twist
Either stir ingredients directly into an ice-filled rocks glass, or stir in an ice-filled glass and strain into an ice-filled Old-Fashioned glass. Garnish with an orange twist (preferred) or lime peel.
Comments: The Rabo de Gala is often served in large shot glasses neat. Some recipes prefer to use one ounce of one or the other, either Cynar or sweet vermouth, versus both; but the ratio of cachaca to “other” is always 2:1. Recommended cachaca brands are: Novo Fogo Silver, Leblon, Yaguara Cachaca Branca, Pitu Silver and Ypióca Prata Classica.
