Pink Lady

There’s nothing really gender-specific about the PINK LADY. It’s pretty and pink, yes, and similar to a Clover Club. But, it’s stronger with its combination London dry gin and applejack brandy. Pomegranate-based grenadine is used to offset the tartness of fresh lemon juice. The addition of egg white gives it a silky-smooth texture.

Requirements: London dry gin, applejack brandy, lemon juice, grenadine, egg white, Maraschino cherry garnish

• 1.5 oz. gin
• 1/2 oz. applejack brandy
• 3/4 oz. lemon juicce
• 1/2 oz. grenadine
• 1 egg white
• 1 cherry garnish

Add all liquid ingredients to a shaker and dry-shake (without ice) vigorously to build foam. Add ice and shake again vigorously to chill. Strain into a cocktail glass and garnish with a Maraschino cherry.

History: Its beginning and naming is a bit ambiguous. It was a Prohibition-era drink. The grenadine and lemon juice were most likely mixed in as a tasteful solution to cheap gin available at the time. It’s reputation as a “girl’s drink” probably developed from comments in a book by Jack Townsend, president of New York’s bartender’s union, titled The Bartender’s Book, 1951.

Comments: This is much easier to make than the similar Clover Club cocktail and is delicious. It’s really no more gender-specific than a Margarita or Cosmopolitan. Egg whites were a common addition to classic old cocktails — they are tasteless, but add great texture. Just make sure the eggs are pasteurized & refrigerated.
