Dark ‘n Stormy

The DARK AND STORMY cocktail was created on the island of Bermuda by British naval officers shortly after World War I when they mixed rum with ginger beer to combat seasickness. This drink was later trademarked by the Gosling company as the Dark ‘n Stormy, and it can only be made with Gosling’s Black Seal rum and Gosling’s Stormy Ginger Beer. When a non-Gosling rum is used, it may be referred to on public menus as a Safe Harbor to avoid legal issues with the Goslings. Home bartenders can choose their preferred dark rum and ginger beer.
Requirements: dark rum (recommend Gosling’s Black Seal or Myers’s Dark), ginger beer, lime, Angostura bitters (optional)
- 3 oz. (2 jiggers) dark rum
- 4 1/2 oz. (3 jiggers) ginger beer
- 1/2 oz. lime juice and lime wedge or wheel
- 2 dashes Angostura bitters (optional)
Fill an old-fashioned glass with ice. Pour the ingredients into the glass and stir. Add the lime wedge as a garnish.
Comments: Some bartenders pour the ginger beer into a tall glass with ice, then slowly add the dark rum so that it separates like a black & tan. While this creates a visually appealing presentation (see below), I prefer to mix the ingredients together for consistency in taste. Adding a dash of Angostura bitters is a nice touch.
