Acapulco
The ACAPULCO is a refreshing light rum-based drink. It’s a cocktail offspring of the Daiquiri and Margarita (less the tequila). It can be mixed with fresh lime juice or with Rose’s bottled lime juice. If you can’t go to a beach on a hot summer day or to Acapulco, there is the Acapulco cocktail to sip, preferably ice cold.
Requirements: light rum, Cointreau or triple sec, Rose’s lime juice (or fresh lime juice), simple syrup, lime wheel or mint sprig for garnish
- 2 oz. light rum
- 1/2 oz. orange liqueur
- 1/2 oz. Rose’s lime juice
- 1/4 oz. simple syrup
Add ingredients to an ice-filled shaker. Shake vigorously and strain into a chilled coup or cocktail glass. Garnish with a lime wheel or mint sprig.
Comments: Sweetening with simple syrup should be adjusted to personal preference. If Cointreau and fresh lime juice are used, increase the simple syrup slightly. If other orange liqueur like Combier is used with the already-sweetened Rose’s lime juice, less simple syrup is necessary. Also, with light rum dominating the drink, use your best. Bacardi worked well in my mix.
