Kew Garden

The KEW GARDEN is a garden-fresh fizzy cocktail mixing the flavors of cucumber, mint, elderflower, and lime with blended white rum. The result is a deliciously light thirst-quencher, perfect for warm summer days. Though it doesn’t include quite the botanical collections of the U.K.’s landmark Kew Gardens, the reference by name feels appropriate.
Requirements: blended white rum (Banks 5-Island preferred), St-Germain elderflower liqueur, lime juice, simple syrup, club soda, 4 cucumber slices, 8 mint leaves & sprig
- 3 cucumber slices to muddle, 1 for garnish
- 8 mint leaves, 1 mint sprig for garnish
- 1/2 oz. simple syrup
- 2 oz. white rum
- 1/2 oz. St-Germain elderflower liqueur
- 3/4 oz. lime juice
- chilled club soda to top
Muddle 3 cucumber slices in a shaker with simple syrup and 8 mint leaves. Add white rum, St-Germain liqueur, lime juice, and ice. Shake to chill and strain into a highball or Collins glass filled with ice. Top with chilled club soda. Garnish with a mint sprig (or a mint sprig poked through a cucumber slice, optional). Comments: Banks 5-Island white rum is recommended for its smooth blend of 3-5 year aged rums from five islands: Trinidad, Jamaica, Barbados, Guyana, and Java. A second-best option is Plantation 3-Stars white rum (used in the serving above), which blends rums from Trinidad, Jamaica, and Barbados. A special guest in this mix is the cucumber, whose flavor is increasingly infused into more cocktails for its fresh, natural appeal. Topped with chilled club soda, The Kew Garden is less boozy and more garden-fresh, perfect for an outdoor stroll or poolside refreshment.
