Emerald
It’s an Irish-whiskey Manhattan — the EMERALD. But it more closely resembles the Scottish Highlander in that it infuses the orange flavors from orange bitters and orange peel into an Irish whiskey instead of maraschino cherry into bourbon or rye. Because Irish whiskey is smoother and less intense than a bourbon, rye or scotch, the role of sweet vermouth is important. A good vermouth should be used in this mix.
Requirements: Irish whiskey, sweet vermouth, orange bitters (Regans’ preferred), aromatic bitters (Angostura preferred), orange peel for garnish
- 2 oz. Irish whiskey
- 1 oz. sweet vermouth
- 2 dashes orange bitters
- 1 dash aromatic bitters
Add ingredients to an ice-filled mixing glass and stir to chill. Strain into a cocktail or coupe glass. Express an orange peel over the drink and drop it in.
Comments: Some of the better sweet vermouths recommended are Carpano Antica, Dolin, Cinzano, and Cocchi. For my Emerald, I used and highly recommend Glendalough Double Barrel Irish Whiskey (thanks to Stew Leonard’s Wines & Spirits of Norwalk for the tasting), Carpano Antica sweet vermouth, Regans’ Orange Bitters and Angostura aromatic bitters.
