Cheeky Peach

The CHEEKY PEACH is a fizzy vodka-based cocktail that ranks among the best summer drinks. Its mild peach flavor is balanced by pineapple juice, vodka and Peychaud’s bitters. Topped with seltzer or club soda, it makes a refreshing choice for outdoor or early evening enjoyment.

Requirements: vodka, peach liqueur or schnapps, pineapple juice, simple syrup, Peychaud’s bitters, 5 mint leaves, 1 mint sprig

  • 2 oz. vodka
  • 1/2 oz. peach liqueur
  • 1 oz. pineapple juice
  • 1/2 oz. simple syrup
  • 2 dashes Peychaud’s bitters
  • 1-2 oz. club soda
  • 5 mint leaves and 1 mint sprig

Combine everything except the club soda in a shaker with 5 mint leaves. Add ice, shake vigorously and strain over a large ice cube into an Old-Fashioned or rocks glass. Top with club soda and garnish with a mint sprig.

Comments: The peach schnapps is used sparingly in this mix and is well-balanced with the other ingredients. It’s not overly sweet and avoids the addition of lime or lemon, which can sometimes make a drink tart. With mint, pineapple juice, club soda and a straw, it’s a good fit for the summer season. Using quality vodka is recommended. Smaller ice cubes can be substituted for one large ice cube.
