Brennivin Aquavit Negroni

In the BRENNIVIN AQUAVIT NEGRONI, the Icelandic aquavit Brennivin is combined with Aperol and sweet vermouth to create an interesting twist on the negroni. Aperol, which is similar to Campari but less bitter and with less alcohol, takes a lesser part in this than the Campari in a standard negroni, as does the sweet vermouth. The mild caraway spice from Brennivin adds a very different and welcome tasting experience in this negroni.

Requirements: Brennivin, Aperol, sweet vermouth (Carpano Antica Formula preferred), orange twist

  • 1 oz. Brennivin
  • 3/4 oz. Aperol
  • 3/4 oz. Carpano Antica Formula sweet vermouth
  • 1 orange twist or peel

Stir ingredients in an ice-filled mixing glass until icy cold. Strain into a coup glass and garnish with an orange twist or peel. Skal!

History: Brennivin aquavit was introduced by Danish merchants in Iceland in the 17th Century and is considered Iceland’s schnapps. Brennivin is made with fermented mash potatoes flavored with caraway seeds. (Caraway is one of few spices that grow wild in Iceland, despite the harsh climate.) At 37.5% alcohol, the name translates to “burnt wine” because it is distilled over an open flame versus the cooler fermentation of wine and beer. Brennivin consumption became so popular that it was often abused and was therefore distributed in a “boring” black-labeled bottle to discourage over-consumption. It began legal importation to the U.S. in 2014. The Brennivin Aquavit Negroni was reportedly created by Oregon barman Tyler Hauptman shortly thereafter.
