Black Tea Mule
Naming it the BLACK TEA MULE*, this non-alcoholic drink resembles the Kentucky Mule in preparation. It uses strongly-brewed black tea instead of bourbon and after cooling will mix with ginger beer, lime juice and spiced demerara syrup. The spiciness of real ginger beer with the syrup’s baking spices, toasted peppercorns, cherry bark, and orange peel make this a particularly savory iced-tea mule. The addition of mint sprigs tops it off.
Requirements: black tea (English Breakfast preferred), ginger beer, fresh lime juice, spiced demerara (preferred) or simple syrup, mint sprig(s)
- 2 oz. black tea
- 3/4 oz. fresh lime juice
- 1/4 tsp. spiced demerara (or simple-) syrup
- 3 oz. ginger beer
- 1-2 mint sprig(s)
Steep 3-4 teabags black tea in 8 oz. boiling water for 5 minutes. Allow to cool or refrigerate. Fill chilled rocks glass or copper mule mug with ice. Add demerara syrup, lime juice and chilled black tea to glass. Top with chilled ginger beer and stir gently. Garnish with 1-2 mint sprigs.
Comments: Brewed and chilled tea offers many possibilities for non-alcoholic cocktail concoctions. When mixed with the lime and ginger beer, it becomes much more than a flavored iced tea. This one is refreshing and stimulating for any time of the year. The tea can always be replaced with de-caffeinated tea when desired.
