Emerald

It’s an Irish whiskey Manhattan — the EMERALD. However, it more closely resembles the Scottish Highlander by infusing orange flavors from orange bitters and orange peel into Irish whiskey, rather than using maraschino cherry in bourbon or rye. Because Irish whiskey is smoother and less intense than bourbon, rye or Scotch, the role of sweet vermouth is important. A good vermouth should be used in this mix.
Requirements: Irish whiskey, sweet vermouth, orange bitters (Regans’ preferred), aromatic bitters (Angostura preferred), orange peel for garnish
- 2 oz. Irish whiskey
- 1 oz. sweet vermouth
- 2 dashes orange bitters
- 1 dash aromatic bitters
Add the ingredients to an ice-filled mixing glass and stir to chill. Strain into a cocktail or coupe glass. Express an orange peel over the drink and drop it in.
Comments: Some of the recommended sweet vermouths include Carpano Antica, Dolin, Cinzano, and Cocchi. For my Emerald, I used and highly recommend Glendalough Double Barrel Irish Whiskey, Carpano Antica sweet vermouth, Regans’ Orange Bitters, and Angostura aromatic bitters. This mix is hard to enjoy just one. Sláinte (pronounced slawn-cha)!
